Victorinox is a worldwide known company based in Switzerland. They are mainly focusing on high-quality knives, and especially their Swiss army knives are legendary. It’s a long way from Japan to Switzerland, however other traditional western manufacturers have jumped on the boat of Japanese knives, and they are enjoying success. So let’s start the Victorinox Fibrox 7-inch Santoku review now.

The Blade

As the title of the review suggests, we are dealing with a 7-inch blade. It is made of high-carbon stainless steel, which should not rust or stain under any circumstances. However, I still wouldn’t recommend putting the knife in the dishwasher. Do yourself a favor, and wash the knife in the sink, and then dry it with a piece of cloth. This way, it will stay sharper much longer.

Now if you are used to traditional knives, you may be wondering what the “Granton edge” is. We’ve already covered that question in the Santoku buying guide. It’s a type of edge, which is designed to improve the slicing performance of the blade. To put it simply, there are dimples on both sides of the blade. Its main purpose is to prevent the food from sticking to the blade. Try to cut a freshly peeled potato with a traditional chef’s knife? What will happen? One half of the potato will most likely stick to the blade. Personally, I hate when that happens, and therefore I really like the Granton edge blades.

Apart from that, the blade is pretty standard – it has the typical shape of Santoku knives with a straighter curve than western chef’s knives. This makes it less suitable for rocking-based cutting.

The Handle

Made of the Fibrox synthetic material, the blade has properties, which make it highly resistant to slippage, and it’s also perfectly ergonomic. It may not look as good as some of its competitors, but it serves its purpose. It’s designed in such a way, that it prevents bacteria from settling in crevices. It’s also very easy to clean the handle after usage.

Overall, the knife is quite light and feels perfectly balanced.

Customer Opinions

The customers love this knife. Its current average rating is sitting at an excellent score. 97% of the reviews on one of the most popular websites are positive. Most of the reviewers praise the knife for its sharpness, balance, and comfortable handle.

There were some concerns that the handle feels cheap, but I cannot agree with that statement, as I would say the handle feels very good for a synthetic.

One of the other praised factors is the price. Given the fact that other Santoku knives from reputable companies cost $100+, it’s really no surprise that this one is popular with its price set at such low mark.

All in all, I would say the Victorinox Fibrox 7-inch Santoku knife is an excellent choice if you want to have a great Santoku without spending too much on it.
